Local Greens, Maine Roots: Baxter Teams Up with Springworks Farm

Good beer starts with good ingredients, and so does a good meal. That’s why we’re excited to share a change at Baxter that we’re proud of: the fresh greens on your plate now come from just up the road.

We’ve partnered with Springworks Farm to source local lettuce for The Pub at Baxter Brewing. Springworks is a hydroponic greenhouse farm based in Lisbon, Maine, growing fresh lettuce year-round, even through the depths of a Maine winter, when “local produce” usually feels impossible. They’re only eight miles from our door, which means the greens in your salad travel about as short a distance as fresh can get.

For us, this was an easy call. Springworks shares something we care about deeply: keeping Maine’s food economy local and supporting the businesses growing alongside us. When we can put a neighbor’s hard work on the plate and hand our guests something fresher for it, that’s a win all around.
